“Mo-om…what’s for dinner?”

Why is it that when I hear those words, the hairs on the back of my neck raise?
Perhaps it’s because I fear the commentary from Statler and Waldorf…

Uh…I mean Jake and Cal!

(Here’s my cute little heart breakers and me this past Valentines’ Day!)

Pursing health and victory, over this eating addiction, means teaching our children health too.  Here’s a look at “what was for dinner” last week here at the Fink home. I’m no gourmet, and you’re about to see that first hand:

Monday: “Breakfast for dinner” has been a tradition here for years now!

Buttered whole wheat toast (clearly a tad too crispy!), scrambled eggs with spinach (this is the ONLY way I have successfully gotten them to eat spinach) and fresh strawberries.

Tuesday: An unnamed original.

Cheese tortellini, broccoli, chick peas in a garlic-olive/canola-oil blend that my mother-in-law buys for us. She buys it at her local Walmart and it tastes YUMMY!

Wednesday: Let’s just call that “Diva Day”! My friend, Fany, brought dinner over for us; what a blessing as Dave is on the road!

Dinner was: Peruvian chicken, potatoes, salad and fruit cup.  The chicken left me angry that I wasn’t raised in Peru, but grateful that God planted Peruvian Chef Fany across the street from us!

Thursday: McDonald’s Birthday party time! The boys ate chicken nuggets, apple slices and milk. (They don’t know the apples come with caramel as of yet). And, they enjoyed a slice of birthday cake there too.  I ate a grilled chicken wrap and thoroughly enjoyed a small vanilla iced coffee – YUM! No cake for Steph, my treat was the iced coffee!

Friday: Pizza and salad night. Again, another tradition for at least a year now.

Dave and I eat salads, the boys don’t enjoy lettuce, so this week, they ate fresh cucumbers and tomatoes.

My goal is for a fruit or veggie at every meal! As you can see, I am certainly no gourmet! So that’s why I need you!  What are some easy, quick meals you make that have some fruits and veggies in them?!  Eating health-ier doesn’t have to require hours in the kitchen!

So I’m asking you, “WHAT’S FOR DINNER?”

    Thanks for the hot tips Sarah! Just checked out Kraftfoods.com – The “Toad-in-a -Whole Bake” recipe has me quite excited as I’m a breakfast food freak!

    Register at Kraftfoods.com They send you a quarterly magazine that is chock full of recipes and they also send weekly e-mails with recipe ideas. Another great source is the Wegman’s Magazine.

    Steph, I love these ideas! You totally have me thinking about fruits and veggies now. Selah and I have been enjoying PB&J with baby carrots and apple slices because of your inspiration.

    Last night, my family had grilled chicken salads with all the fixins – cucumbers, mushrooms, tomatoes, chick peas, hard boiled eggs, broccoli, carrots, craisens, shredded cheese, and chicken. Selah’s salad didn’t have any lettuce, but with a little balsamic vinaigrette, she ate all of her veggies and chicken – Yum!

    We are also big fans of turkey chili with all those iron-filled kidney beans. A sprinkle of cheese and a dollop of low fat sour cream gives us a bit of calcium as well.
